Salmon, avocado and toasted nori

This brown rice with salmon, avocado and toasted nori is no exception.

Method
1. Bring the water with the sea salt and rice to a boil in a saucepan. Lower the heat and simmer, covered, for about 40–50 minutes, until the grains are tender and the water has been absorbed. Remove the pan from the heat. Let stand for 10 minutes, then fluff with a fork.

2. Heat the canola oil in a non-stick frying pan over high heat. Pat the salmon fillets dry. Fry the fish for 1½ to 2 minutes, so the outside is golden brown while the inside is still raw. Let cool briefly. Meanwhile, toast the nori sheets by holding them one at a time with tongs in the flame of the stove until they start to fray and release their aroma.

3. Mix the lemon juice, soy sauce and chili sauce in a bowl. Divide the rice among four plates and pour half of the sauce over it. Arrange the avocado and cucumber on the rice. Break the salmon into pieces and divide among the plates. Drizzle with the remaining sauce and sprinkle with coriander and chili pepper, if desired. Break the nori into pieces and serve on the side.
