Sandwich with vegan chickpea salad

Vegans certainly don’t eat only lettuce and raw vegetables. Lisa Stel, known for the Lisa goes Vegan platform, hopes to dispel this misconception with her book Vegan Comfort Food. It contains only warm, easy and – of course – vegan recipes. Like this chickpea salad.

Lisa: “Maybe you turn your nose up at the words ‘chickpea salad’. But this salad is really worth trying and can be made in no time. It’s fresh, crunchy and perfect for a good lunch.”
Method:
1. Finely chop the red onion, slice the radishes and gherkin, and snip the chives finely.
2. Drain the chickpeas and mash them with a fork. Add the red onion, fresh chives, vegan mayonnaise, mustard and cayenne pepper. Season the chickpea salad with pepper and salt.
3. Top your (wholegrain) bread roll with some iceberg lettuce, the chickpea salad, slices of gherkin and radish.
Lisa’s tip: “Add some pieces of nori sheets for a seaweed flavour. Don’t want to use mayo? Use some tahini instead. Not a fan of gherkins? Use capers instead. Not a fan of food? Then I really don’t understand you.”
