Yes! Strawberry Madeleines!

Madeleines met aardbei, witte chocolade en rozemarijn

Okay guys, stop the presses: these madeleines with strawberries, rosemary and white chocolate are everything you want when you’re staying home on the sofa today. They come from the book Sunday, which is packed with delicious recipes to make every weekend a celebration.

The familiar shell-shaped little cake, but just a little different. Because the madeleines turn a beautiful red, they look spectacular. The addition of rosemary gives them a distinctive flavor, and chocolate is of course always a good idea. If you don’t have a madeleine pan, you can make cupcakes with this batter. Bake them for about 4 minutes longer.

Method (makes approx. 25)

1. Melt the butter in a small saucepan over low heat so it doesn’t color. Add the rosemary and let it simmer along for 3 minutes. Make sure the butter doesn’t turn brown. Remove from the heat and let stand for 20 minutes.

2. Put the strawberry pieces in a bowl and purée with a stick blender until smooth.

3. Put the eggs and sugar in another bowl and mix with a hand mixer until light and foamy. Then stir the mixture into the strawberry purée.

4. Take another bowl and add the flour, salt and baking powder. Pour in the strawberry mixture and gently stir everything together. Strain the butter over the top so no rosemary gets into the batter, add the food coloring and stir again.

5. Grease the madeleine molds and dust with a little flour. Pour in the batter and refrigerate for 20 minutes.

6. Preheat the oven to 180°C. Bake the madeleines for approximately 8 minutes, until done.

7. Meanwhile, melt the chocolate au bain-marie. Bring a layer of water to the boil in a saucepan and place a bowl on top. Make sure the bottom of the bowl does not touch the water. Put the white chocolate pieces in the bowl and stir until everything has melted.

8. Let the madeleines cool and carefully remove them from the molds. When the little cakes have cooled completely, dip the tops into the chocolate. Place them on a piece of baking paper so the chocolate layer can harden.

Make the best hot chocolate, optionally with a generous dollop of whipped cream. The madeleines will taste even better with it!
