Fine dining at Brasserie Carstens

Dining at the former chef of De Librije***? Early next year, Brasserie Carstens will open its doors opposite Amsterdam Central Station, with the former chef of the three-star restaurant.

Chef Maik Kuijpers came up with the new concept: a brasserie accessible to everyone, where you can enjoy familiar dishes with a creative twist. So no Michelin-starred plates, but an approachable brasserie with very good food and Maik’s star-level skills. The leading role goes to ingredients from Dutch soil.
Hearty fare with refined flavors
Ingredients are sourced from all over the Netherlands, from the North Sea to the Veluwe. At Brasserie Carstens, you come for North Sea sole fried in brown butter or an old-fashioned Caesar salad, but made with organic kale. The menu changes every season but always remains in the same style: hearty fare with refined flavors. The food is served with wines from winemakers with a Dutch connection or local beers from craft breweries.

Carstens
The name Carstens was inspired by that of the Carstens family, who lived in one of the small houses in the Park Plaza Victoria Amsterdam hotel in the nineteenth century. The brasserie’s entrance will be located in Hasselaerssteeg, between Damrak and Martelaarsgracht. Maik Kuijpers and Park Plaza Victoria Amsterdam are joining forces for Brasserie Carstens.
