Chilcano with Pisco
Whether it’s the weekend or still a long way off: there’s always an excuse to make this delicious cocktail for yourself.

Julian Bayuni of Vesper in Amsterdam says this about his cocktail:
‘An easy-to-prepare cocktail with Pisco, the Peruvian grape distillate you already know from the irresistible Pisco Sour cocktail.’
‘But this spirit also works beautifully in many other cocktails. Leave the shaker at home; you can simply make these long drinks by pouring the ingredients into the glass and giving them a ‘gentle stir’.’
Method:
Fill a highball or long drink glass with ice. Add the pisco and lime juice, top with ginger ale and add the bitters. Stir briefly and garnish with a lime wedge.
