5 quick weeknight dishes #2

When you come home from work hungry, you often don’t want to spend hours in the kitchen. Of course, that doesn’t mean you should eat less deliciously because of it. All of these dishes are ready in under 30 minutes and can be served to guests with pride.

5 quick weeknight dishes
Scampi shrimp
We never say no to shrimp loaded with butter and garlic. Shrimp also have a very short cooking time, which means this dish is on the table within minutes. This recipe for large garlic shrimp with white wine shows how easy it is.
Salmon with za’atar and tahini
This salmon from Ottolenghi is simply brilliant. If you’ve never combined salmon with tahini before, a real treat awaits you here—in under twenty minutes.
Gnocchi with speck
If you have a hearty appetite, make this creamy potato gnocchi with speck and peas from Spaghetteria. Make enough—you’ll definitely want to serve yourself an extra plateful.

Melanzane alla parmigiana
Okay, this melanzane recipe may take 40 minutes in total, but you can sit on the sofa during the final half hour while the oven does all the work. Layers of eggplant with tomato sauce and cheese—if you’re in the mood for comfort food, make this.
Sausages from the oven
Combine sausages in an oven dish with onion, garlic, olive oil and good balsamic vinegar. These can be beef chipolatas, but pork sausages work too—as long as they aren’t too thick, so no bratwursts. Put everything in an oven at approximately 175 degrees for 10–15 minutes. Then add halved cherry tomatoes and bake everything for another 10 minutes. Remove from the oven and stir in fresh basil. Delicious with good bread for mopping up all the juices.
