Budget cooking: potatoes

Stretching your last bit of money just before your salary is deposited can be a challenge, especially after the expensive month of December. You still want to eat well, of course. The humble potato will take you a long way.

Potatoes are often eaten as a side dish, but with these recipes, they become the star of the meal.
Pancakes
Add an egg, flour and plenty of cheese and you have the perfect savory pancake batter. Fry them until golden brown and crispy. Top with a poached egg and you instantly have a very chic dish.
Mashed potatoes
Perhaps the ultimate potato dish: mashed potatoes. Kale, hotchpotch or this mash if you fancy something lighter. With turnip, radish and chervil, and thankfully no smoked sausage is missing.
Jacket potato
Delicious as a side dish at a barbecue, but this recipe with beans can easily be eaten as a main course.
Mashed potatoes with mushrooms
The mashed potatoes by Joel Robuchon become wonderfully creamy thanks to plenty of butter and heavy cream. Serve them with a beautiful mushroom ragout and your comfort meal is complete.
Potato salad
And not the kind of salad that consists solely of mayonnaise—just add some potatoes to your salad for a change. This salad comes with a fresh dill dressing. Add some extra zucchini, broccoli or green beans if you feel like eating plenty of vegetables.
Oven dish
With green beans and speck. Put the whole thing in the oven for 40 minutes and you have a delicious meal.
Pyttipanna
A Swedish dish that is perfect for using up leftovers. Cubes of potato are fried with bacon, onion and an egg. But if you have other vegetables or meat in the fridge, feel free to add those too.
