Chicken Thighs with Satay Sauce

We love spooning satay sauce over all our food. By baking the chicken in the sauce, all the flavours soak in extra well. Of course, save a little to spoon over your plate at the end.

Extra delicious with PNUTS peanut butter from PNUTS. But if you have another half-full jar in the cupboard, you can use that up too.

Method
Preheat the oven to 190 degrees. Put the coriander, including the stems, in your food processor together with the chilli, garlic, peanut butter, soy sauce, ginger, and lime zest and juice. Add a few tablespoons of water and blend until you have a smooth paste. Season with salt and pepper.

Place the chicken thighs in an oven dish, spoon half of the satay mixture over them (keep the rest in a bowl to serve alongside later), and make sure the chicken is well coated with the mixture. Drizzle with a little olive oil and season with pepper and salt.

Bake the thighs in the oven for 30–40 minutes, until cooked through. After 20 minutes, drizzle the honey over the chicken. Remove the chicken from the oven and sprinkle the sesame seeds over it. Serve with rice or a fresh green salad, with your satay sauce on the side.
