Favourites for Easter brunch

With steaming croissants, a perfectly cooked scrambled egg, soft brioche bread and a butter lamb, you can turn any Easter brunch into a fantastic celebration. Are you organising one yourself this year? These five favourites should not be missing.

1. Lots and lots of bread
Make sure you have the indispensable basics: buttery croissants and crispy white rolls. Bake them yourself? You can, but buying them fresh from the bakery is even tastier. Also indispensable: brioche—ready-made is fine. And scones with clotted cream and jam. We bake the classic version.
Oh yes, we also want a slice of Easter stollen with almond paste, spread with a thick layer of (salted) butter and a mountain of icing sugar on top. FavorFlav’s Emma recommends the stollen from Desemenzo with pastry cream mixed into the almond paste, but a stollen à la Aldi costing less than two euros will do just fine too.

2. Butter lambs
Yes, we mean blocks of butter shaped like baby lambs. Not that the shape actually makes the butter taste better, but it’s all about the idea. You can buy them ready-made at the supermarket, but many kitchenware shops also sell a lamb mould that you can fill with butter yourself.
3. Eggs of all shapes and sizes
Scrambled, fried, boiled or poached: anything goes, so go all out. Try classic devilled eggs with original toppings, such as bacon bits and chilli flakes. Or practise making perfect scrambled eggs – you still have a week.
4. Baked goods
Bake a fresh raspberry and pistachio breakfast cake or moist apple-cinnamon muffins. Ideal: you can easily make them a day in advance. On Easter morning itself, bake thick, fluffy pancakes with maple syrup.
Savoury baked goods are also a must at brunch. Go for quiche: easy to make, with endless variations. Another good idea: a thick breakfast pizza with mozzarella and pancetta.

5. A glass of bubbly
