Instagrammable croissants

A little pastry has been splashing across your Instagram feed lately. After the cronut, the matcha éclair and the unicorn cream puffs, the croissant is next in line for a serious makeover.

It looks cheerful: a croissant in every color of the rainbow. But doing that solely to be able to post a flashy photo of it on Instagram may be taking things a bit too far. We might even call it blasphemy, but let’s not get into that discussion here. Colored croissants, then. My conservative nature immediately condemned the trend; Pierre Hermé’s croissant Ispahan is quite far enough for me.

And now here’s the thing: I’m coming back to my opinion. A search on the internet teaches me that there are quite a few serious pastry boys and girls making next-level croissants; not just in terms of appearance, but taste too. And so I caught myself sitting completely drooling in front of my screen. Because: those croissants are simply the shit, there’s no other way to put it.

For the stubborn among us, I’ve listed the three tastiest croissants I came across. They may not be as colorful, but I think they taste fantastic:

This gorgeous croissant from Supermoon Bakehouse in New York is filled with hazelnut praline and dark chocolate ganache.

These croissants from Toronto (Bake Code) may be slightly less Instagram-worthy, but we weren’t going for looks anyway. They’re filled with salted egg yolk—come on, seriously.

Okay, another croissant from Supermoon Bakehouse, but this one brushes up against heaven on earth, so it has to be included: this croissant is filled with a pistachio-rose cream and topped with edible rose petals and candied pistachios. Who’s coming with me to NYC?
