Mascarpone: we absolutely love it. This fatty, creamy cheese works well in both sweet and savory dishes. Essential in the perfect tiramisu but also delicious in a creamy pasta. Did you know that you can easily make the cheese at home? And you know what? You only need three ingredients.

Method

Preparing mascarpone is super easy. Heat the heavy cream au bain-marie to around 80-85ºC. Meanwhile, dissolve the tartaric acid in the water and add it to the heated cream. Instead of tartaric acid, you can also use lemon juice . Note: use one of the two acids, not both.

After adding the acid, stir the mixture for five minutes at the same temperature; it will thicken. Transfer the thick cream to a bowl and let it rest for at least eight hours. Then let it drain in cheesecloth for twelve hours. Now you have mascarpone! Store it in the refrigerator in a sealed container for up to about a week. Need inspiration?
