Never Sticky Noodles Again

You mix pasta with the sauce immediately so it doesn’t stick together, but with Asian noodles things often work a little differently. You cook them and set them aside before they’re ready for your wok dish or soup. But oh, that sticking! Here’s how to prevent it.

Unless you’re a seasoned Asian cook, there’s a good chance your noodles aren’t always ready at exactly the right moment to go into the wok. Not a problem at all, but it is a little disappointing when your drained noodles stick together into one big block after a few minutes. Fortunately, the solution is very simple.

Stirring
Just like with pasta, it’s important to stir the water occasionally while cooking. This keeps the noodles from sticking together during cooking. If your noodles are already one big clump when they come out of the pan, there’s no saving them.
Oil
And what about after draining? Simply drizzle a little oil over the noodles. A neutral oil such as sunflower or rice oil is fine, but you can also use sesame or chili oil to give the noodles extra flavor.
Lots of noodles
Are you making noodle soup for a large group and want to cook the noodles in advance? Drain them in small batches and, so to speak, make small nests that you keep separate from one another. When you then slide those ‘nests’ into the soup and stir briefly, the noodles will come apart again.
