This is the difference between chouriço and chorizo

Slices of chorizo on a drinks platter or pieces incorporated into a pasta dish. But wait, are you eating chorizo or chouriço? Dutch supermarkets mainly sell Spanish chorizo, but you can also choose Portuguese chouriço from a sausage shop for a change.

There is definitely a difference between the two sausages: both in terms of taste and appearance.

Difference between chouriço and chorizo

One sausage comes from Portugal and the other from Spain, but are there any other differences? Chorizo is known for its red color from the paprika and its firm, coarse texture. The Portuguese sausage has a different composition from Spanish chorizo. Chouriço has a stronger and spicier flavor and is darker in color.

The darker the color of the sausage, the spicier or stronger it is. For example, there is morcela fumada, which is very dark in color and full of heat. The Portuguese sausage also comes in all kinds of different flavors, such as beer, wine, garlic or onion. A popular dish that uses chouriço is caldo verde, a kind of Portuguese-style kale soup.

Love grilled sausage? Portuguese enthusiasts probably already have one at home: an assador. This is a special small sausage grill that you can use to roast chouriço. You fill the base with a layer of pure alcohol and light it. Then you make shallow cuts in the sausage, place it over the flame and flambé it. And voilà: your chouriço snack is ready.
