I remember being very surprised when I watched Top Chef a few years ago and suddenly saw a contestant putting cheddar in her pie crust. And not a crust for a quiche, but one for an apple pie! The jury was enthusiastic, but the idea seemed utterly ridiculous to me. Carla Hall, the contestant in question – who has since upgraded her pie recipe with bacon – was right after all, because these days I see many more pies like this appearing.

A centuries-old tradition

In fact, serving sharp cheddar in or with your apple pie is a centuries-old tradition in America. It started with a slice alongside the pie, but the cheese is sometimes also incorporated into the pie. Grated into the dough, for example, or in slices on top of the filling. It may sound strange, but these days we’re no longer surprised by a delicious sweet-and-salty combination, are we? Could this be the precursor to salted caramel? According to some people, a scoop of ice cream on your apple pie pales in comparison to cheddar—it’s that good.

There’s even a saying that I absolutely don’t want to keep from you. An apple pie without the cheese, is like a kiss without the squeeze. That says it all, I think. So hurry to the store to stock up on all the ingredients for a cheesy apple pie.
