Potato salad is pretty underrated. We don’t get it, because it’s a fantastic side dish. To prove it, we’re listing five variations that don’t even resemble the monotonous supermarket salad with mayo you probably thought of right away.

Baby potatoes with crunch
Potato salads are usually a little mushy. We also enjoy a bit of bite in a salad like this, which is why we’re going for this version with baby potatoes, red onion, chives, crushed chips and Old Bay. As for that last ingredient: it’s a spice blend you can’t buy at just any supermarket. We’ve definitely seen it at Tjin’s, but you can also make the blend yourself if you like. And those chips? Of course, you can easily make them yourself, but in this case we also approve of opening a bag from the supermarket—it’s not a main ingredient in this salad.

Potatoes with dill and lemon
Want to put together a hearty salad at the last minute, or are you looking for a perfectly fresh side dish? Then we recommend this quick version with dill, parsley, chives and lemon vinaigrette. It tastes best after spending a night in the fridge. That’s when all the flavors infuse the potatoes.
Sweet potato fry salad with chicken
This salad is packed with ingredients, making it a great main course. What you get: crispy, thin sweet potato fries, marinated pieces of chicken, red chili and plenty of delicious grilled vegetables with a lime dressing. Preferably topped with a hard-boiled egg. Almost too beautiful to eat.
Potato slices with radish and mustard dressing
Here’s another potato salad that’s quick to fix. Besides (small) potatoes, you’ll need thinly sliced radishes and finely chopped parsley. The dressing with whole-grain mustard and lemon juice is ready in no time too.
Potatoes with chorizo and shallot
This potato salad is best eaten while it’s still slightly warm. You use firm, red-skinned potatoes and sprinkle them with chili and paprika powder for a little kick. Without a doubt, the very best part is the aioli: you make it yourself, then spoon it over the potatoes together with finely chopped scallions and fried chorizo.
