5x vegetarian cookbooks

Not eating meat for an entire week—that’s the challenge during National Meat-Free Week. For many people, that’s easier said than done, because what do you put on the table instead of that juicy meatball with gravy? We’ve got your back, because with these new vegetarian cookbooks, you’ll manage just fine—and you’ll be cooking fabulous vegetarian food for the rest of the year too.

Mari plukt de dag
Mari Maris
One of my favorite cookbooks is De Groentebijbel: van aardappelpuree tot zuringsoufflé by Mari Maris. This cookbook is packed with fantastic recipes for every vegetable you’ll ever come across at the market. At the end of last year, her second cookbook was published: Mari plukt de dag. This hefty and more than worthy successor to De Groentebijbel is full of recipes using fresh ingredients without a travel history. And tips—so many tips! Both for cooking and for gardening.
Een nieuwe kijk op eten
Anna Jones
Healthy, light, nutritious and inexpensive food—and preferably as quickly as possible. Go on, give it a try, let alone if it also has to be vegetarian. Still, it’s something we all want more and more; eating meat every day simply isn’t necessary. English author Anna Jones bases her recipes on our changing eating habits. Een nieuwe kijk op eten is therefore full of new ideas for a way of cooking that isn’t based on dairy, heavy carbohydrates and gluten. One more tip: every month, new recipes by Anna Jones appear on The Guardian’s website.
Heel veel veg!
Hugh-Fearnley Whittingstall
Heel veel veg! is the successor to Hugh Fearnley-Whittingstall’s bestseller Veg! If there’s anyone on this planet who knows their way around vegetarian recipes, it’s him. The recipes are divided into spicy vegetable dishes, roasted vegetables, substantial salads, soup, raw dishes & breakfasts, tapas, mezze & side dishes, and potatoes & grains. His recipes always work, by the way. In short: this is simply a very good book that you’re guaranteed to cook from a lot.
Zes seizoenen
Joshua McFadden
In this cookbook, chef and vegetable grower Joshua McFadden shares 225 simple and inventive recipes starring seasonal vegetables. What’s particularly appealing about this book is its clear structure: the recipes are categorized not only by season, but also by vegetable. As black-and-white as I can sometimes be, I have a huge soft spot for that.
The New Forest Feast Cookbook
Erin Gleeson
You either have to love it, but if you do, this is a book to go wild over. Artist and blogger Erin Gleeson returns with an atmospheric vegetarian book in which not only her colorful and healthy recipes, but also her watercolors and photography take center stage. Think healthy dishes such as watermelon and tomato salad, pear galettes and sweet potato chowder. Very girly, but tasty and vegetarian. Het nieuwe Forest Feast kookboek is available from April 10.
