6 vegetarian dishes where you won’t miss the meat

In this bitter cold, we’re craving comfort food. Things like spaghetti bolognese or beef stew may be the first to come to mind, but what if you want to eat vegetarian? Then make one of these six dishes, where you won’t miss the meat for a second.

Indian curry
If you want to eat more vegetarian food, Indian cuisine is a great place to start. Many dishes are already vegetarian, and with all those spices, you’ll never miss the meat. This vegetarian curry with cauliflower and paneer (Indian cheese) could easily become a weekly favorite. Or go for the popular saag paneer.
Vegetarian bolognese
Normally, I’m not really into ‘things that aren’t things,’ but I’ll make an exception for this cauliflower ‘bolognese.’ The sauce is wonderfully savory and rich, and if you’re really craving comfort food, this vegetarian pasta is just for you.
Jackfruit rendang
Jackfruit is trendy among vegetarians and vegans, and for good reason. Its texture really resembles that of slow-cooked meat, which makes this vegetarian ‘rendang’ with jackfruit an ideal vegetarian meal. You simply use a packet of ready-made boemboe paste, so it’s not much work either.
Mushroom risotto with an Asian twist
A bowl of creamy risotto is the ultimate comfort food. Mushrooms have a slightly meaty texture and flavor, so you really won’t miss the meat. This risotto has an Asian twist: there’s no Parmesan in it, but another umami bomb instead—miso. A little unusual, but delicious.
Braised leeks with eggs and za’atar
If there’s anyone we trust with our vegetarian meals, it’s Yotam Ottolenghi. He’s a master at bringing flavors together, and these braised leeks with eggs and za’atar are the perfect example. Add some bread to scoop everything up with, and you’re done.
