6x saucy meatballs

Fried until crispy in butter, and when you cut them in half, steam comes pouring out. Smothered in sauce, which you then mop up completely with good bread… Meatballs in sauce are sometimes all you need to forget your problems. These are our favourites.

Lamb in tomato sauce
These lamb meatballs from Donna Hay get extra flavour from the cumin seeds and fresh oregano. You fry them in the pan first, then pour tomato sauce over them and top the whole thing with two kinds of cheese. A few minutes under the grill and you have the ultimate comfort food.

Swedish meatballs
Move over, IKEA: with this recipe, you can make the most delicious Swedish meatballs at home. The sauce is creamy, with a generous spoonful of mustard stirred through it. Delicious over pasta, but also with bread and a green salad.
Chicken
If you fancy a creamy sauce but don’t want to feel like you’re going to burst on the sofa after dinner, this is the recipe for you. The sauce for these chicken meatballs includes capers and lemon, giving them a wonderfully fresh flavour.

The ultimate Italian-American sandwich, perfect as a main meal. Meatballs, tomato sauce and loads of cheese on a sandwich. You really can’t say no to that.
Middle Eastern
Very little can go wrong with spiced lamb mince with a yoghurt sauce flavoured with herbs and garlic. If there’s a Turkish or Greek shop nearby, get some good pitas or other flatbread. Make a wrap or use the bread to scoop up bites. As long as you eat with your hands, we don’t mind.
Liège-style
These Liège-style meatballs are the perfect Sunday meal. We’ve made them several times already and they remain a favourite. The sauce contains plenty of onions, brown beer, wholegrain mustard, vinegar and syrup. This creates the ultimate sweet-and-sour combination that makes it impossible to stop eating.
