Morocco – Baghrir

This thousand-hole pancake from Morocco is baked on one side, which creates bubbles on top and leaves holes in the pancake. Honey, butter or syrup spreads into all the holes in the pancake. This Moroccan version is much softer and spongier than our Dutch pancake. Here’s how to make it yourself.

India – Dosa

In southern India, people prefer crispy, savory dosa pancakes. The batter is made from rice and urad daal (split black lentils), which you leave to ferment overnight. Then you process the mixture in a food processor with some water until it becomes a batter. The pancakes are eaten with chutney or filled with, for example, a spicy potato filling. You can also get dosa in Amsterdam at the Indian restaurant Savaranaa Bhavan. Or make them entirely yourself with this recipe.

Austria – Kaiserschmarren

If you go skiing every winter without fail, you’ll know these small, thick pancakes: kaiserschmarren. The kaiserschmarren batter is baked as one large pancake with raisins (optionally soaked in rum) and eventually cut into pieces or pulled apart. In the end, you’re left with thick, small pieces of pancake garnished with powdered sugar. Add a spoonful of applesauce on the side and they’re ready to eat. Here’s how to make them yourself.

China – Jianbing

The traditional street-food breakfast in China: jianbing. This breakfast dish most closely resembles a filled crêpe made from wheat and mung beans. The filling consists of eggs, spring onions, spicy pickles, crispy puffed wonton and hoisin or chili sauce. Once filled, the crêpe is rolled up, cut in half and served. You can get them in the Netherlands at these addresses.

Vietnam – Bánh xèo

This Vietnamese pancake is quite different from all those soft varieties. It is made from rice flour and lightly fried in a layer of oil in the pan, which makes it so crispy. This street food is filled with pork belly, shrimp, bean sprouts and spring onion. The pancake is served with lettuce and a Vietnamese dipping sauce. You can easily make it at home with this recipe.

Russia – Blini

Blini are a little like poffertjes, both being small and round. But blini are slightly flatter and come from Russia. You could also see blini as the chic version of the pancake, as they are served with smoked salmon and caviar. There are many different variations of blini, but the traditional ones are made with flour, buckwheat flour and yeast. Here’s how to make them yourself.
