Because anyone who thought you could use the same slicer for every cheese is mistaken. And that applies to a lot of people, because most kitchens have a cheese slicer with a long blade in the drawer, but not the short one (which has virtually no blade). High time to get one of those too.

The reason why one cheese slicer has a blade and the other does not is actually very simple. You use the slicer with the short blade for young cheeses, and the cheese slicer with the long blade for aged cheeses. Why? If you use the long cheese slicer on young cheeses, you will notice that the slice frays along the blade. And you do not want that. If you use the short cheese slicer, this does not happen and you get perfectly smooth slices for your grilled cheese sandwich or bread roll.
