An Ode to Zaanse Mayonnaise

I always have a whole range of mayonnaise varieties at home. French Amora with extra mustard, the slightly more sour Japanese Kewpie, truffle mayonnaise, you name it. When I serve potatoes or fries, I often put them all on the table, but I notice that I dip my spoon into the same jar most often: the one containing Zaanse mayonnaise.

Zaanse mayo: nothing but love

Zaanse mayo is a crowd-pleaser. The distinctive tube—but I have a jar because it contains more—can be found in many people’s refrigerators, but in my opinion it isn’t praised often enough. Zaanse mayo is mild, something some people unfairly label as bland. Nothing could be further from the truth. The perfect combination of sweet and sour, without overpowering flavors, means it goes with everything.

In the mix

Its mild flavor also makes this mayonnaise the very best for mixing. Are you making dressing for Caesar salad, do you want to make your burger spicier with Sriracha mayonnaise, or are you going for a fresh dipping sauce made with mayo, yogurt and herbs? The aforementioned mayonnaises are often too overpowering in flavor, but Zaanse isn’t. No, Zaanse mayonnaise is your friend. It absorbs all the flavors beautifully without taking the credit itself.

Always there for you

Cookbooks and chefs invariably promote homemade mayo for the best flavor. And yes, making mayonnaise yourself is fun on a rainy weekend when you have nothing better to do. Even better is knowing that there is always a jar of Zaanse mayo waiting for you in the refrigerator, for all those moments when you need it. When you feel like a BLT, for example, when you eat cold leftover chicken straight from the refrigerator, or with perfectly baked potatoes.
