Making the ultimate fudgy brownie is incredibly simple. Especially with these tips & tricks we got from Amsterdam pastry chef Waldo. Once you’ve mastered the recipe, you’ll be whipping up chocolate treats in no time, whether in a regular oven or in the Airfryer. These have something extra thanks to the Baileys used both in the batter and in the chocolate fudge layer on top.

How to make the Baileys brownies

  • Preheat the oven to 160 degrees.
  • Grease a 20 cm brownie tin with butter and line it with baking paper.
  • Melt the butter, chocolate and granulated sugar au bain-marie.
  • Once everything has melted, add the Baileys and stir.
  • Sift the flour into the mixture and stir well until everything is combined and the batter is lump-free.
  • Then add the eggs and mix with a whisk or electric mixer for 2 minutes.
  • Pour the batter into the tin and bake in the oven for about 30 minutes.
  • Leave the brownie to cool in the tin.

How to make the chocolate Baileys fudge

  • Melt the chocolate, condensed milk, Baileys and butter in a saucepan.
  • Once melted, remove the pan from the heat and mix with an electric mixer until completely smooth.
  • Pour the fudge over the brownies and place in the fridge to set. Then you can remove the brownie from the tin and cut it into pieces.
  • Dig in!
