Baked Stuffed Courgette Rolls

A delicious recipe from our colleague Sven (from Franska.nl). He absolutely loves meat, but this vegetarian baked dish that he prepares in the AEG steam oven regularly appears on his table.

A perfect dish when people are coming over for dinner. You can prepare everything for this dish during the day and put it in the oven when your guests arrive.
Method
Cut the courgettes lengthwise into slices using a cheese slicer. Sprinkle the strips with a little fresh pepper and a very small amount of salt. Grill the strips in a griddle pan until they have a brown striped pattern. Leave the grilled courgettes to cool on a plate.
Put the ricotta, mozzarella, half of the Parmesan cheese, the egg and the finely chopped herbs in a large bowl. Stir everything together well.

Pour a small amount of passata into an oven dish, just enough to cover the bottom. Take 2 or 3 courgette strips and lay them lengthwise, overlapping halfway. Now take a heaped spoonful of the cheese mixture from the bowl and spoon it onto the laid-out courgette ribbons. Roll up the courgette to create a beautifully filled roll. Repeat with all the courgette ribbons. Place the rolls in the oven dish and pour some passata over them.
Sprinkle the remaining half of the Parmesan cheese over the top and place the dish in a preheated oven at 200 degrees. Bake for approximately 25 minutes. Delicious with pieces of ciabatta and a glass of red wine.
