Barbajada is Italy’s most delicious coffee and how to make it

Next to Milan’s beautiful, historic opera house Teatro alla Scala sits Caffè dei Virtuosi. It was here that the owner, Domenico Barbaja, once accidentally created a drink made with coffee, cocoa, water, milk and a cloud of whipped cream. It became so popular that you couldn’t leave the city of Milan without having tasted it. Even the first king of united Italy, Vittorio Emanuele, invariably had a barbajada for breakfast. We’ll tell you how to make this hit yourself.

How to make barbajada

  • Heat the milk and water in a small saucepan. Add the cocoa powder and granulated sugar. Meanwhile, make hot espresso and add it. Turn off the heat, mix everything well and divide between the cups.
  • Pipe a cloud of whipped cream over the barbajada.
