Buffalo Wings with Blue Cheese Sauce from the Air Fryer

Sometimes I think I should have been born in America, because I LOVE their snacks. Then again, I prefer the Dutch drinks-and-bites culture, so a mix of the two would actually be perfect. Onion rings, cheesecakes, mozzarella sticks… LOVE IT. But my ultimate favorite has to be Buffalo Wings. And of course, the deliciously spicy kind. With blue cheese sauce. I really don’t understand why I can’t find them on menus anywhere in the Netherlands (except at the Hard Rock Café). So delicious. Luckily, they’re very easy to make yourself.

First, pat the chicken wings dry with paper towels so they are completely dry. Meanwhile, preheat the Airfryer to 180 degrees. Then put them in a plastic bag with a spoonful of baking powder (I find this easiest) and let them sit for a bit. You can make them without baking powder, but they will be less crispy, and I love crispy Buffalo Wings.

Then comes the next step: put them in the Airfryer. Cook them for around 12 minutes at 180 degrees, then toss them around and cook for another 10 minutes at 200 degrees. In my experience, it can vary a bit from one Airfryer to another how quickly they cook, so keep an eye on them.
The blue cheese sauce
Meanwhile, you can make the blue cheese sauce. Just as easy: put the garlic, sour cream, mayonnaise, blue cheese and lemon juice in a blender (or do it by hand if you’re in the mood) until smooth. DONE. Whuuut? So delicious and so easy. Serve with some celery sticks for dipping.
When the chicken wings are ready, put them in a large dish or bowl. Then pour the hot sauce over them, along with the Tabasco and Worcestershire sauce. If you don’t like either of those last two, you can leave them out. Toss everything together well and that’s it: time to eat! It may be unnecessary to mention, but I would definitely have rolls of paper towels ready, because eating these Buffalo Wings is very messy. And very spicy, so you have to be into that. I’m going to make them again right away. SO DELICIOUS.
