Chef’s favorites with Sabrina Ghayour: ‘Tripe? Never again!’

Sabrina Ghayour

She is the golden girl of Persian cuisine and, following the (in our opinion fantastic) books Persiana, Sirocco and Feasts, she is releasing her fourth book: Bazaar. Packed with spectacular, colorful, vegetarian recipes to dream about. But what are Sabrina’s personal favorites?

Always in my fridge
“FETA!”

My favorite drink
“Water and, if we’re talking alcohol: pisco sour.”

Favorite family recipe
“I’m self-taught, so I don’t have any real family recipes. But Persian rice dishes are always good.”

Favorite hangover meal
“An English bacon sandwich!”

Ultimate guilty pleasure
“Too many to mention, but my love for crisps is huge. Very huge.”

Favorite recipe from Bazaar
“Aubergines with tomato and tamarind sauce, and halloumi baked with rose harissa, lime and honey.”

Can’t live without this kitchen tool
“A high-quality, large chef’s knife.”

You can wake me up for
“Toast with avocado, feta, chili, tomato and coriander.”

The strangest thing I’ve ever eaten (and is it worth repeating?)
“Jellyfish—and absolutely! The texture was crunchy, very interesting.”

Favorite bar
The Groucho Club in London; the pisco sour is fantastic, although it is a members-only club.”

Never again
“Tripe, because whatever you do with it, the smell remains so incredibly pungent—I just can’t get past it.”

If I don’t feel like cooking then…
“I usually make instant noodles or order food.”

Favorite cookbook
“I adore the books and cooking of Nigella Lawson.”
