Corona hit: frittata with chips

You’re starting to get tired of that always-good pasta. And the pantry is almost empty, because going to the supermarket once a week is the new normal. So you look at your almost-empty pantry with a creative eye. That’s how you come up with unique creations such as: iced tea with peas, chicken breaded in chip crumbs or… frittata with sweet-and-sour chips.

Be honest: those salt and vinegar chips were simply a bad buy, because in your supermarket rush you grabbed the wrong bag from the shelf. And apart from some eggs, there’s nothing edible to be found in the cupboard either. Go through the supermarket again? No way, just make this frittata with chips. And if you don’t have sour cream and onion chips, you can easily use up your leftover barbecue chicken-flavored chips or that awful bolognese flavor.
Meal salad with chips
FavorFlav’s Sharon knew much earlier that a dinner based on chips is perfectly fine, as shown by this insanely delicious meal salad of winter carrot, tuna and plain chips—also developed during difficult times, incidentally. On Instagram, we saw desperate dishes such as chicken breast breaded in Chipitos, sandwiches with lasagna, and also less successful experiments, such as frozen peas in a drink as ice cubes when the ice has run out. Anyway: put your scruples aside and bake a delicious frittata with chips.
How to make a frittata with chips
- Preheat the oven to 180 degrees.
- Heat the oil in a frying pan that can go in the oven, or an oven dish that can also go on the stovetop. Sauté the onion in it and let it caramelize over low heat.
- Beat the eggs with the sour cream or crème fraîche.
- Crush the chips, finely chop the herbs, and cut the spring onion into rings. Add them to the egg mixture, but reserve a little for garnish.
- Season with pepper and salt.
- Pour the eggs into the pan.
- Place the frying pan (or oven dish) in the oven and cook for 10 to 12 minutes, until the top has set.
- Let cool for five minutes, then decorate the frittata with some more sour cream, the reserved herbs and a few more chips.
