Creamy Nut Butter Ice Cream

Peanut butter, almond or cashew butter: they’re all the perfect base for creamy ice cream. Peanuts give your ice cream a good kick, while other spreads have a more subtle flavor.

Method
Stir the peanut butter or almond paste and the milk together and heat over low heat in a heavy-based saucepan. Meanwhile, whisk the sugar and egg yolk together until lighter in color and foamy. Stir the milk and nut butter mixture into the eggs and sugar to combine, then pour it back into the pan.
Stir and heat the mixture, making sure it does not boil, until it is thick enough to coat the back of a wooden spoon. If you have a sugar thermometer: aim for 80 degrees. Pour it into a bowl to cool, then place it in the refrigerator. Whip the cream until it forms soft peaks and mix it with your custard mixture. Transfer it to an ice cream maker and follow the manufacturer’s instructions.
