Passionfruit Granita

Lelani: “Shaved-ice vendors can be found on almost every street corner and at all the markets on the Caribbean islands, with every flavor you could possibly imagine. I was delighted when I found a shaved-ice cart that drove through Amsterdam’s Dappermarkt in the summer. I always order maracuja, as passion fruit is called in the French-speaking Caribbean islands—the word comes via Portuguese from Tupi. This granita is an easy version to make at home, without large blocks of ice or special ice shavers.”

How to make passion fruit granita

  • Mix 4 tablespoons of sugar with 180 milliliters of water in a small saucepan and heat over medium heat until the sugar has dissolved. Allow to cool completely.
  • Halve the passion fruits and scoop the pulp into a bowl; add the zest and juice of the mandarin. Add the sugar syrup and mix well. Spoon into a large dish or container and place in the freezer for 45 minutes. Scrape with a fork to separate into small crystals. Freeze for 1 hour and repeat the scraping. Freeze for another hour.
  • Meanwhile, cut the peel from the orange, including the white pith, and cut the fruit into segments between the membranes. Mix in a bowl with the remaining sugar and the grated zest and juice of the lemon and lime.
  • Arrange a few orange segments on plates and spoon the granita on top. Finish with a spoonful of condensed milk.
