Some dishes are so delicious that you would go to a restaurant just for them. The cheesecake at Fa. Pekelhaaring in Amsterdam is exactly that kind of dish.

The white chocolate cheesecake with raspberry sauce is a cheesecake like no other. The cake isn’t baked, but sets with the help of gelatin. Beyond that, the recipe is an absolute mystery, which I have tried—and failed—to extract from the staff many times.

Crunchy biscuit base
You get an enormous slice of cake, which at first you think you can easily finish. Its texture is somewhat light, while it is otherwise an incredibly creamy, rich indulgence. It is served with a fresh raspberry sauce, providing a beautiful balance to all that richness. The crunchy biscuit base completes the whole thing.

Perfect finish
Although you can also eat very good Italian food at Fa. Pekelhaaring, I come here more often for the cheesecake than for anything else. Just a slice after dinner and then home again. It was also on the menu at the now-closed Speijkervet. Much closer to my home, so I was extremely sad when it closed. But this cheesecake is worth cycling to the other side of the city for.
