The initiator of the second Ramen Festival is Susam Pang of BySam, one of the food bloggers nominated in the recent Favorflav Food Top 100. This year, the festival will take place at Het Sieraad in Amsterdam on Sunday, February 23.

Yamato Ramen School
During the day, you can buy ramen at several ramen stalls, attend workshops by the renowned Yamato Ramen School, and see with your own eyes how fresh noodles are made. In addition to ramen restaurants from Amsterdam, top chef Dennis Huwaë (Daalder/Edel by Dennis) and ramen shops from Düsseldorf, Nijmegen, and Delft will also serve ramen.

From signature ramen to free-style ramen
During the festival, you can order half bowls of ramen (from €5), allowing you to try several varieties. Tonkotsu ramen, chicken ramen, shoyu ramen, spicy ramen, and much more. Ramen expert and curator Susam selected her personal favorites. ToKokoro Ramen from Nijmegen and Nikkou Ramen from Delft will serve their signature ramen. Tokyo Ramen Iki from Amsterdam & Tokyo Ramen Takeichi from Düsseldorf will serve several varieties of ramen and host a Spicy Ramen Challenge. Fou Fow Ramen is coming especially to the Amsterdam Ramen Festival with a limited-edition ramen. Top chef Dennis Huwaë is also cooking a special ramen: ‘When I was still cooking at the Okura Hotel, we had a ramen lunch every Sunday. The entire restaurant would be full of Japanese guests. I made so much ramen during that time!’

Japanese snacks, karaoke, and beer
Japanese noodle soup pairs perfectly with Japanese snacks. At Kotobuki and Food of Japan, you can get fried Japanese chicken, takoyaki, savory pancakes (okonomiyaki), as well as typical Japanese desserts such as mochi, taiyaki, and dorayaki. Dim Sum District will toss gyoza (Japanese dumplings) around, Duck Truck will serve their famous duck buns, and Madame Cocos will drive their cool Piaggio into the festival with their famous coconut balls with a Japanese twist. Bar Karakter/Baohuis is organizing a karaoke party that festival visitors can join for free. And to soothe your throat, Asahi Super Dry beer comes to the rescue with their special Asahi bars.

Ramen workshops and demos
Perfect noodles are an essential part of a good bowl of ramen. Yamato, known in Japan for its special noodle machines and prestigious Ramen School, has just launched its ramen course in the Netherlands and will give a sneak preview of the course at the festival. They will also bring their gigantic noodle machine to demonstrate how the special noodles are made. Sun Noodle from New York (known for Momofuku and Ivan Ramen) will also be present together with Foodex Netherlands to present their fresh noodles to the public.
