Do you love sushi? Then make this sushi cake from Poké Perfect!

Sushi—name someone who doesn’t love it. Personally, I have my sushi favorites (Tamago! Avocado Sake Maki! Salmon Skin Temaki! Crispy Tekka Maki Special!) and I die a little inside when someone orders something as banal as sushi with cream cheese (yes, it exists) or banana. But a sushi burger, or one of those cheerful sushi cakes, is something I can definitely get behind.

That cake exists for a reason, by the way, because June 18 is International Sushi Day. An extra reason to eat sushi, and yes: to make a cake while you’re at it. We got the recipe from Poké Perfect. Happy sushi day!

How to make the sushi cake

  1. Prepare the rice according to the instructions on the package.
  2. Using a sharp knife, cut the salmon into cubes of approximately 1 x 1 cm.
  3. Cut the avocado, cucumber and mango into cubes. Cut the spring onion into thin rings. If you are using frozen edamame beans and/or orange masago, thaw them in hot water.
  4. Take the nori sheets, place them on top of each other and cut the corners off into a rounded shape. Keep cutting until you have three identical circles.
  5. Place the cut nori circles on a work surface and grab a spoon. Press the sushi rice onto the sheet with the back of a spoon. Continue until there is a thin layer of rice on the nori.
  6. Decorate the various nori-rice layers with the salmon, avocado, cucumber, mango, spring onion and edamame beans. Decorate to your heart’s content—it doesn’t matter where you place the ingredients. It’s your party!
  7. Finally, place the three layers on top of each other. If you notice that the cake sinks slightly in the middle, reinforce those spots with some extra sushi rice. This will create a sturdy base. Sprinkle the top layer with the orange masago and black/white sesame seeds.
