Easy: making butter

Making your own butter is very easy and you only need one ingredient. And no, we don’t spend every Sunday morning churning our own butter to go with our croissants either. But give it a try sometime, it’s really fun—and delicious too.

What do you need? Half a litre of fresh cream (preferably from a local farmer), a mixer, a bowl and some sea salt. Pour the fresh cream into the bowl and mix until it becomes whipped cream; if all goes well, this happens within a few minutes. Keep mixing until you see two textures forming: thicker pieces and liquid separating from each other. The liquid is buttermilk; pour it off and store it in the fridge. It’s delicious to use in other dishes or to drink on its own.

Making everything yourself? These are things we’d still rather buy ready-made.

Next, knead the thicker pieces into a ball. Squeeze the ball well until no more liquid comes out at all. This way, you filter the remaining buttermilk out of your butter, helping it keep for longer (around three weeks). Voilà, your butter is ready! As a finishing touch , we like to knead some coarse sea salt into our butter. Feeling creative? Add some garlic, parsley and lemon for garlic butter. Or cocoa for cocoa butter. Let your imagination run wild—the possibilities are endless.
