Eataly is coming to the Netherlands

New slow-food concept
Oscar Farinetti, the founder of the Italian slow-food concept Eataly, wants to launch in the Netherlands in two years. Eataly is a concept with food halls that have space for a supermarket, a restaurant and several shops. Only high-quality Italian products are used, with sustainability and responsibility held in high regard. One possible location for Eataly is the food department of the Bijenkorf in Amsterdam. There are already around thirty locations worldwide.
Cup of coffee becomes more expensive
Your flat white, cappuccino and cup of filter coffee will become considerably more expensive this year. The price of coffee beans fell by a fifth over the past year, but will rise again in the coming months. Partly due to drought in Brazil and climate change in the rest of the world, combined with declining production, the harvest forecast has had to be adjusted. Uncertainty about coffee beans is causing prices to rise. The characteristics of the coffee plant mean that coffee producers can hardly respond to price changes in the short term. It takes several years for a coffee tree to become fully productive, and the supply of coffee does not change. People have already invested in plantations and therefore continue to produce coffee, even when the price changes.
Allergies and dietary requirements frustrate chef
David Kinch, chef at three-Michelin-starred restaurant Manresa in California, is frustrated. The reason? More and more of his guests arrive with special dietary requirements or particular allergies. As a result, his carefully composed dishes often cannot be prepared according to plan. A chef with three Michelin stars naturally has the skills to create something delicious anyway, but this restricts his freedom.
