Exciting menu at BREDA

From Amsterdam to Breda, the chefs of Guts & Glory are opening BREDA.

New in Breda
Chefs Guillaume de Beer, Freek van Noortwijk and Johanneke van Iwaarden quietly opened the doors of restaurant BREDA yesterday. The menu is exciting; just like at Guts & Glory, you can enjoy a chef’s menu, but it won’t have a theme attached to it. Instead, you can choose from a Basic, Extra and Full Monthy menu. Reservations for January can be made here.
Bananas threatened with extinction
A life without bananas is of course unimaginable, but it may soon become a reality. Bananas are being affected on a large scale by Panama disease, a type of fungus. In the 1960s, the Gros Michel banana variety disappeared because of the same fungus. According to Simram Sethi, who researches the fungus, Panama disease is the direct result of climate change and our flawed food system: “Everyone invests heavily in the same crops, but because of climate change we don’t know exactly what will happen to them.” Sethi’s solution? “We need to preserve biodiversity, that’s all.”
Drinking wine in Canada
Forget New Zealand, California, South Africa or New York—Canada is the new cool kid in wine town according to The New York Times. In Ontario, the region that is also home to the famous Niagara Falls, around a hundred wineries have been producing wine since 1974. Grape varieties from cool climates do particularly well because of the Siberian winters and Mediterranean summers, but chardonnay, pinot noir and even syrah also come from there.
