Fa. Speijkervet Becomes Partisan

When Fa. Spijkervet closed its doors last year, every food lover in Amsterdam was sad. Good news: a new restaurant is coming to the same premises, and we can only be enthusiastic about it. 

In the nearly five years that Fa. Speijkervet existed, it had become an established name in Amsterdam’s hospitality scene. With its rugged cuisine – you could, for example, eat an entire suckling pig there – and a cheesecake we cycled across town for, that was entirely justified.

Partisan
Partisan, a wine bar and restaurant, is now coming to the premises. It is owned by the owners of, among others, Café Panache. But the kitchen is completely independent. Whereas Panache cooks in a fairly modern style with lots of foams, the cuisine at Partisan will be much simpler.

Fewer products on the plate, little fuss and cooking with whatever is available. This keeps the spirit of Fa. Speijkervet alive, and we’re happy about that. The building’s former function – it used to house a bakery – is also being taken into account, as they will bake their own bread here.

Wine
At Partisan, they will be doing a lot with wine. The bar has been relocated and it has now truly become a wine bar. They will work extensively with natural wines and cider; we are especially curious about the cider.

Lunch
On Saturdays and Sundays, you can order a three-course lunch for €20. No sandwiches, but hot dishes. Very accessible in terms of price, and exactly what we at FavorFlav have been looking for for a long time. The lunch will be mainly French, with classic starters such as terrine. Fun things will also happen with the wines and Champagne here; after all, it’s the weekend.
