Fideuà: faster than paella, but at least as delicious

Fideuà

Bart van Olphen has an enormous love for the picturesque Catalan coastal town of Cadaqués. Bart: ‘A regular stop whenever I’m there: eating this local speciality in the village square at Can Rafa.’ Fideuà is very similar to paella, but instead of bomba rice, short noodles are added to the dish. It is quicker to prepare than paella, but at least as delicious.

Classic dish

Bart: ‘We cooked this classic recipe by my friend Tonin Vukaj together in my garden. These short noodles originally come from Valencia, and from there they made their way slightly further north. And, importantly: perfect for preparing on the BBQ.’

How to make fideuà

  • Place the pan with 2 tablespoons of olive oil over direct heat on the BBQ and fry the fideuà until golden brown for 3–4 minutes, stirring well. Remove the noodles from the pan and set aside.
  • Return the pan to direct heat on the BBQ and add the remaining olive oil. Fry the squid for 2–3 minutes, stirring, until golden brown and add salt to taste. Keep stirring well while frying. Now add the onion, red pepper, garlic and prawns. Fry for 2 minutes, then add the chopped tomato together with the saffron threads. Stir well, add the stock and simmer for 10 minutes over indirect heat, so that the temperature remains around boiling point.
  • Now add the fideuà and spread it across the pan. Add the razor clams and cockles and simmer everything for 4–5 minutes until the noodles are al dente.
  • Remove the pan from the heat, leave to rest for a few minutes and serve.
