First flexitarian pop-up in Amsterdam

The Sint Olof Chapel on Zeedijk in Amsterdam will temporarily become the domain of star chef Chris Naylor from Restaurant Vermeer. This Saturday, Roomservice at Olof’s will open here.

Amsterdam’s oldest chapel has been completely furnished in hotel-room style. Why? The hotel that normally houses Vermeer is being renovated, so there are plenty of items left over. FavorFlav was allowed to take a sneak peek inside and spotted bedside tables, old-school telephones and Bibles containing the menus.

Flexitarian

The restaurant describes itself as Amsterdam’s first flexitarian restaurant. Chef Chris Naylor has a great passion for vegetables and therefore gives them the starring role on the menu. Think pumpkin purée with salt crust and pear, and roasted carrot and parsnip in miso broth. If you do want meat or fish, you can order them as side dishes.

You won’t pay Vermeer prices. If you opt for vegetable dishes only, you can have three courses for under thirty euros. But the wine cellar has moved along too, so the bill can easily add up. The cocktail bar and vermouth bar are also tempting. The latter is a first in the Netherlands. If you don’t have time for dinner, a drink in the impressive chapel is highly recommended.
