Fish Cakes by Sam Stern

Cooking for yourself isn’t sad. Quite the opposite: no one will snaffle food from your plate before you’ve had a chance to take a bite. And that’s especially handy with these easy-peasy fish cakes for one, by Sam Stern.

Method
Flake the fried fish fillet with its crumb coating and mix it into the mashed potatoes. Season with salt and pepper. Shape the mixture into two cakes. Dip them in the flour, then in the beaten egg, and finally press them into the breadcrumbs until they are coated all around.
Heat a splash of olive oil in a frying pan over medium heat and fry the fish cakes for 5 minutes on each side, or until golden, crispy and piping hot.
