Forget High Tea, Here’s High Sea!

There’s nothing wrong with a High Tea. But if you prefer savory over sweet, a High Sea is a better idea. This dish combines the flavors of the sea with special teas. We’ll tell you where you can order a High Sea.

For a High Sea, we drove to Eindhoven. In the city’s coziest neighborhood, Kleine Berg, you’ll find the Asian fusion restaurant UMAMI by Han. UMAMI by Han has received a Bib Gourmand distinction from Michelin, but it loves to innovate. No concept or menu stays the same here for long.

You can also go there for street food and, more recently, steamed seafood. Fish and seafood play a major role in Asian cuisine—fish is associated with abundance and prosperity—and the in-house ‘The Steamed Seafood Bar’ is happy to embody this. The star of the menu: a true High Sea.

High Sea

High Sea is reminiscent of a Fruit de Mer (also great as a drinks platter!) and consists of seafood such as lobster, shrimp, oysters and mussels, combined with various sauces. The dish is not only delicious, it also looks spectacular when served at the table. Of course, you can drink wine with all those delicacies from the sea—bubbles or Chardonnay, for example—but tea works too.

Delicious Fish Dish

If I may give you one more tip: also order the spicy Black Cod from the steamed seafood menu. Steaming is one of the oldest cooking techniques in Eastern cuisine and has been used by the Chinese since around 5,000 BC. Steaming is rooted in Taoism, where everything revolves around striving for balance and harmony. It is about finding an equilibrium between Yin (steaming) and Yang (stir-frying and deep-frying) in order to function optimally and happily.

Believe me: the steamed Black Cod will make you instantly happy. This is a truly delicious dish of steamed fish with a silky sauce made from black beans, soy sauce and crushed chilli pepper. A small (single-serving) portion of 100 grams costs €14.25; a double portion of 200 grams costs twice as much (€28.50).

Culinary Experience

You can order a High Sea from 2 people onward and it costs €35 p/p; a matching tea pairing costs €13.50 p/p. So, off to Eindhoven! In nice weather, you can sit comfortably on the terrace; when it gets colder, you can sit inside at the seafood bar or at one of the tables.
