French fry research: fries turn out to be quite healthy

These fries turn out to be much healthier than you thought.

Fries are actually quite good for you, according to research published in Food Chemistry (read here how many types of fries there are, by the way). They contain many more antioxidants in fried potatoes, pumpkin, tomatoes and aubergines than their baked or boiled versions. And antioxidants protect the cells in your body.
It was already known that when eating, for example, aubergine roasted in olive oil, the body is better able to absorb the vitamins from the food than when eating boiled food.
