Ginger beer chicken wings

Barbecuing is difficult? No way, grillmaster Jord Althuizen shows in his new book Smokey Goodness No Worries BBQ that even someone with two left hands can conjure up something delicious from the BBQ.

Jord: “Nope, not ginger ale but ginger beer! Like its soft-drink sibling, this special drink usually contains no alcohol, but all the more spice and punch. Its main ingredients are ginger and cane sugar, two crops that grow everywhere in Queensland and are processed there by Bundaberg Brewery into a popular drink. The characteristic bottle with its rip cap was perfect during our Aussie road trip, but it is also widely available here and makes a great base for a chicken wing glaze with a surprisingly delicious flavour. After taking the food photo, the wings disappeared faster than you’ve ever seen a chicken run – so make them!”
Method:
1. Prepare a BBQ with a lid for indirect grilling and heat it until a temperature of 160 °C is reached.
2. For the Smokey’s Simple Rub, mix all the ingredients and season the chicken wings evenly on all sides. Place the wings on the grill and cook them for 20–30 minutes, until they reach an internal temperature of 72 °C.
3. Meanwhile, make the Ginger Beer Glaze by reducing the ginger beer in a pan to about ¼ of its original volume. Add the remaining ingredients and stir well until everything has dissolved and you have a smooth, thickened sauce.
4. Brush the cooked wings all over with this several times and, with the lid closed, let them cook for another 5 minutes, until the sauce has thickened on the wings and the wings have reached an internal temperature of 75 °C. Serve the chicken wings in a bowl and garnish with the spring onion.
