Grandma Agnes is from Suriname, where her father was Minister of Economic Affairs. Although they had many domestic servants in the house, it was always her mother who stood in the kitchen and prepared the food. This little coconut soup was regularly on the menu and is Grandma Agnes’s favorite soup. Soup is very popular in Suriname: it creates warmth and togetherness, and you can vary it with the ingredients you add.
How to make Surinamese coconut soup:
- Bring the water to a boil in a soup pot and cook the chicken drumettes in it for 15 minutes.
- Then turn the heat to low and add the onion, parsley, and stock cube.
- Let the soup simmer gently for a few minutes.
- Add the vegetables and ginger and simmer for about another 10 minutes, or until the vegetables are tender.
- Finally, stir in the coconut milk and simmer gently for another 5 minutes.
- Garnish the soup with rings of chili pepper.
