Green beans with miso and garlic

Miso is made from fermented soybeans. It is an umami bomb of the highest order, which is why I love cooking with it. It adds so much depth to dishes. Want to give your green beans more layers and a whole lot more flavor? Miso is the answer.

There are white, yellow, red and black varieties of miso, each with a different fermentation time and corresponding flavor. Generally speaking: the darker the paste, the stronger and deeper the flavor. For this recipe, I like to use white or yellow miso, both of which are more beige in color, but if you have a different type of miso at home, that is of course fine too.

How to make green beans with miso and garlic

  • Heat a dry grill pan or frying pan over high heat and place the green beans in a single layer in the pan. Place a heavy pan on top to increase the contact area; this way, the beans will brown evenly. Grill the green beans firmly for about 3 minutes per side. They may start to smoke a little, but that is precisely what makes them so delicious. Repeat this step until all the beans have been grilled and set aside.
  • In a tall measuring jug, mix the miso with the soy sauce, maple syrup, garlic, the juice and zest of the lemon and 75 milliliters of water. Insert the immersion blender and blend until smooth.
  • Heat a frying pan over medium-high to high heat. Add all the green beans and the miso sauce and mix well. Simmer the sauce over low heat for about 2 minutes until it reduces and becomes sticky.
  • Serve the green beans on a serving platter and garnish with the sesame seeds.
