Hard, lumpy brown sugar? Here’s how to soften it again

Do you ever enthusiastically take some ingredients from the cupboard to start baking, or because you’re in the mood for this amazing apple pie toastie, only to discover that the brown sugar in the jar has turned into one enormous rock-hard lump? So irritating. But with this hack, you can solve that problem in no time!

Because while we previously wrote about the trick with a slice of bread or a piece of apple, there’s also an option that doesn’t require any other food. With this tip, you’ll have lovely soft brown or cane sugar again in no time:
Sweet little bag
Put the hardened sugar in a resealable plastic kitchen bag. Use 5 ml (that’s 1 tablespoon when using measuring spoons for baking) of water for every 250 grams of sugar, and pour it over the sugar in the bag. Seal the bag and squeeze out as much air as possible just before closing it, then microwave it for 15 seconds on the highest setting. Some of the sugar will now look completely melted, and that’s exactly what you want. Knead from that soft part while loosening the hard lumps with your fingers (still with the bag sealed), working your way around until the sugar is homogeneous again. It feels great, too! If you don’t have a microwave but do have some time, you can also leave the bag with the sugar and water to rest for half an hour before kneading it.
And voilà, you can get back to work! You can then store the rest of the sugar in the same bag.
