Hot milk cake is hot: this is what it is and how to make it

Feeling hot, hot, hot! Normally, you reach for something cold. But no, we’re diving into a dish that’s just as hot as the temperatures of the past week. Hot milk cake is hot on social media — especially on Pinterest — and that’s why it’s time to take a closer look at this light and airy cake. What is it, and how do you make it?

Hot milk cake, also known as hot milk sponge cake, has been around for a very long time. As early as the beginning of the 20th century, hot milk cakes were being made in many households and professional kitchens. So what exactly is characteristic of this cake? Mainly its light, airy texture and flavor, which you get by heating milk and butter together. Hence the name hot milk cake. It’s a serious sugar bomb, but apparently it still tastes great if you leave out half the sugar.
Delicious decorations
Hot milk cake is the perfect base for decorations. You can also think of it as a very flavorful sponge cake: the foundation for all kinds of elaborately decorated cakes. From whipped cream to ganache and from fruit to chocolate, you can put absolutely anything on it. Or in it, for that matter. The cake is also perfect for filling. In that case, cut it in half and fill it using a piping bag with your homemade filling.
How to make hot milk cake
- Preheat the oven to 175 degrees Celsius. First, beat four eggs in a bowl until you have a light, airy batter. For an extra airy cake, beat the egg mixture for about 6 to 8 minutes.
- Then add the sugar, flour, baking powder and vanilla extract, and mix everything together until you have a creamy mixture.
- Heat the milk and melt the butter in it. Be careful, because the milk must not boil. Remove the pan from the heat when the butter has completely melted.
- Pour the mixture into the creamy batter and combine everything well with a hand mixer. Then pour the batter into a baking pan and spread it evenly. Traditionally, you’re supposed to bake the hot milk cake not in a loaf tin but in a rectangular baking pan.
- Bake the cake for approximately 30 to 35 minutes in a preheated oven. Check it with a skewer to see whether it comes out clean. That way, you’ll know for sure that the cake is done.
- Let the cake cool in the baking pan first before carefully removing it. Dust with some powdered sugar before serving. Enjoy!
