Hot new opening: star chef Peter Gast opens speakeasy Obsidian by Graphite

It’s always great when a new restaurant opens that does things a little differently. Obsidian by Graphite is one such place. In the heart of Amsterdam, star chef Peter Gast experiments with plant-based dishes, while music also plays an important role.

Obsidian by Graphite is the second restaurant in Amsterdam from the chef we already knew from his former Michelin-starred restaurant ’t Schulten Hues*. Peter Gast runs his establishments with his wife and sommelier Jacqueline van Liere.
Obsidian by Graphite is literally located beneath the Michelin-starred speakeasy restaurant Graphite, which Peter opened three years ago on Paardenstraat, near Rembrandtplein. This delighted not only the lucky people who managed to find the restaurant, but also the Michelin inspector. After just a year and a half, at the beginning of 2020, Graphite received its first star.
Speakeasy
And now there is the new speakeasy Obsidian in the Eden Hotel on Amstelstraat. Graphite and Obsidian by Graphite are inspired by the secret speakeasy bars of Prohibition-era America and are small and intimate.
Live music
What can you expect? Through the hotel entrance, take the stairs down and you’ll arrive in an intimate space, complete with a cosy bar, low stage and comfortable seating. The idea is that you eat here, but in a relaxed way. This is also clear from the fact that DJs regularly play here and other live music fills the space. Feel like getting up and dancing during dinner? No one here will find that strange.

The Vegan Test Kitchen
The Vegan Test Kitchen is scheduled twice a month. On these evenings, Peter serves his vegan menu at Obsidian by Graphite, consisting of fifteen to twenty high-end small dishes. And they are not only beautiful to look at, but also unbelievably delicious.
Food Notes Unplugged
In addition to the vegan evenings, Obsidian by Graphite presents Food Notes Unplugged, an intimate live concert by well-known and up-and-coming musicians, giving you the chance to see your favourite artist perform up close. Food Notes Unplugged begins with an extensive dinner consisting of Graphite classics, accompanied by (sparkling) wines, and ends with a live concert on the low stage.
