How long can you keep olive oil?

I can’t think of anyone who doesn’t usually have a bottle of olive oil in the cupboard. There’s little better than a good piece of bread dipped in extra virgin olive oil and a pinch of salt. But how long can you actually keep that bottle?

You may want to be very economical with it, as good oil isn’t cheap. Or perhaps you’ve just opened a bottle you bought from that one small producer in Italy. But do you want to use the oil when it tastes best? Then finish the bottle within six to nine months of opening it. After that, the flavor only goes downhill.

Store it properly

Want to make sure the oil is stored in the best conditions and get the most out of those six to nine months? Keep the bottle in a dark place. Olive oil doesn’t like light. If it comes in a light-colored bottle, you can wrap it in aluminum foil to keep the light out. Do you think you’ll need much longer to finish the bottle? Then buy small bottles.
