How to cut your cucumber into an accordion

I always think this looks so great when I see it pop up on social media. Still, I hadn’t dared to try it yet because I suspected it would be a lot of work and that I’d be too clumsy for it. That suspicion was completely wrong, because cutting your cucumber into an accordion is really easy—and looks spectacular.

And it instantly turns a simple side salad, such as a spicy cucumber salad, into a real eyecatcher.

Cutting cucumber into an accordion

The easiest way is to use two chopsticks, so you can hold the cucumber firmly and don’t cut too far through it. Once you’ve placed the cucumber between the two chopsticks, cut across the width of the cucumber, making ‘slices’ about half a centimeter wide. So don’t cut all the way through the cucumber! That’s what the chopsticks are useful for: you cut down to the chopsticks.

Once you’ve cut the entire cucumber this way, turn it over so the uncut side is facing up. Then repeat the process, but instead of cutting across the width, hold your knife at a 45-degree angle. Again, cut against the chopsticks and voilà: once you’ve done both sides, you’ll have an accordion-shaped cucumber. Very simple, but it looks spectacular. And just look at how it soaks up all that sauce—mmm!
