Recipe: Din Tai Fung’s famous spicy cucumber salad

If there’s one chain I miss in the Netherlands, it has to be Din Tai Fung. This Asian chain now has more than 170 locations worldwide, but for the time being, in Europe they’re only in London… Such a shame, because the food here is so delicious. They’re best known for their Xiao Long Bao (soup dumplings), but the spicy cucumber salad is becoming almost just as famous.

And then I can hear you thinking: how delicious can a spicy cucumber salad be for it to be such a popular dish at this restaurant? Well, absolutely insanely delicious. Luckily, I managed to get hold of the recipe, so you can make it yourself at home. Bet you’ll be instantly addicted?
How to make Din Tai Fung’s spicy cucumber salad
Tip: Make the dish a few hours in advance so the cucumbers can marinate properly and the flavor comes through at its best.
1. Wash the cucumbers and cut them into slices approximately 1 centimeter thick
2. Combine the crushed garlic, soy sauce, rice vinegar, sugar, sesame oil, salt and chili oil. Mix well until the sugar has dissolved completely.
3. Add the cucumber to the dressing and let it marinate in the refrigerator for at least half an hour.
4. Add some red chili on top of the salad before serving.
Good to know: this dressing is completely gluten-free and vegan.
